The intense mechanical shear in the precision gap between the rotor and stator subjects the oil and water molecules to high velocity differentials and turbulent flow, which helps in breaking down the droplets and creating a more uniform mixture

Reduction of Droplet Size: The high shear forces generated by the homogenizer reduce the size of oil droplets in an oil-in-water emulsion. This is important because smaller droplets have a larger surface area, which can improve the stability of the emulsion by reducing the rate of coalescence and separation

Surface Activity and Emulsifier Adsorption: High-pressure homogenization not only reduces droplet size but also increases the surface activity of emulsifying molecules. This can improve the efficiency of the product, such as its coating ability or penetration action. Emulsifiers, which can be proteins or low molecular weight compounds like lecithins and monoglycerides, are adsorbed at the oil-water interface. These emulsifiers lower the surface tension between the oil and water interfaces formed during emulsification and form a protective layer around the dispersed particles, which structurally stabilizes the emulsion
