Green Bean Vermicelli is a linear product of starch, divided into dry and wet. Wet vermicelli is sold fresh in the local area, and dried vermicelli is eaten after being watered, and is mostly used as a cold dressing or soup. It is suitable for both meat and vegetable. Chinese vermicelli and noodles have the same taste, but they are different in thickness. They were collectively called noodles before the Ming Dynasty. The standard of the difference is that the ones with a diameter greater than 0.7 mm are filaments, and the smaller ones are vermicelli.

Hot and sour bean curd vermicelli

Ingredients:

300g lactone tofu, 80g potato vermicelli, garlic, 2 spoons of cooking oil, moderate amount of vinegar, chopped pepper, light soy sauce, coriander, 50g eggs, 3 spoons of chili oil, black pepper

Instruction:

1. Prepare lactone tofu, potato vermicelli, coriander, cooked eggs, chopped peppers, and cooked peanuts.

2. Wash coriander and chop finely; smash garlic; peel and mash cooked peanuts.

3. Put the clay pot on the stove to heat, add some cooking oil, and saute the garlic cloves.

4. Add warm water, boil and add potato vermicelli.

5. Pour the lactone tofu.

6. Pour in vinegar and stir well.

7. Add salt, light soy sauce, and pepper, and boil.

8. Add coriander, red chopped pepper and chopped peanuts.

9. Pour in chili oil, adjust the flavor, and remove from heat. Be careful when eating. The claypot is very hot.
