Description
Black garlic is a type of aged garlic whose browning is attributable to Maillard reaction rather than caramelization, first used as a food ingredient in Asian cuisine. It is made by heating whole bulbs of garlic (Allium sativum) over the course of several weeks, a process that results in black cloves.
Black garlic is obtained from fresh garlic (Allium sativum L.) that has been fermented for a period of time at a controlled high temperature (60–90°C) under controlled high humidity (80–90%). When compared with fresh garlic, black garlic does not release a strong offensive flavor owing to the reduced content of allicin. Enhanced bioactivity of black garlic compared with that of fresh garlic is attributed to its changes in physicochemical properties. Studies concerning the fundamental findings of black garlic, such as its production, bioactivity, and applications, have thus been conducted. Several types of black garlic products are also available in the market with a fair selling volume.
The allicin contained in black garlic has a broad-spectrum antibacterial effect, and it has a killing effect on dozens of epidemic viruses and a variety of pathogenic microorganisms. The main bactericidal ingredient is allicin, and there is also a white oily liquid "propylene sulfide" [(CH2CH2 H2)2S]. This allicin can kill typhoid bacillus, dysentery bacillus, influenza virus, etc. instantly even if diluted 100,000 times. The volatile substances, extracts and allicin of black garlic have obvious inhibitory or killing effects on various pathogenic bacteria in the test tube. These sulfur-containing compounds also have a strong inhibitory and killing effect on spoilage fungi, and their strength is equivalent or even stronger than the chemical preservatives benzoic acid and sorbic acid, and is the strongest antibacterial effect found in natural plants. The bactericidal ability is 10 times that of penicillin.
