How to use Anchi Gelatine?

 

Because of its structure and the presence of ionic charges along the chain, Anchi Gelatin has a very good solubility and exhibits water-binding capacity. Gelatin swells either in cold or warm water, and can bind up to 10 times its own weight of water. High concentration solutions (up to 50%) can be obtained using various methods. To reach total solubilization in a short time, gelatine requires rather low temperature from 50-60 to 90-95°C. Gelatine is practically insoluble in common organic solvents.

 

Gelatin solutions show a workable viscosity even at low temperature (50- 70°C) compared to other hydrocolloids, for which introduction rates are limited. They exhibit the properties of a Newtonian fluid above 40°C. A concentrated gelatin solution can be kept at 55 - 60°c for 4 to max. 6 hours without significant degradation. Beyond this time and temperature, the gelatine properties can be degraded all the more if solution pH is acid (below 5) or alkaline (above 8), or if concentration is low.

 

A gelatin solutions sets below a given temperature, typically between 20 and 29°C. This

Setting temperature depends on the gelatin type, the concentration, its gel strength and viscosity. This gelation process is due to a rearrangement of individual molecular chains into a more or less ordered network of helical arrangements. Gelatin gels are viscoelastic materials with the properties of both solid and liquid. Resilience and hardness of gelatine are given by Bloom level and viscosity.

 

Storage 

Anchi gelatines, delivered in grain or powder form, is stable during storage provided that it is kept away from heat and moisture, preferably below 35°C (95°F) and below 70% relative humidity.

When stored in the previously mentioned conditions and in its original unopened packaging, Anchi gelatines will maintain their initial properties for at least 2 years.

 

Handling Directions

Recommendation for dispersion and solubilisation

 

A proper solubilisation of Anchi gelatines is critical for reaching the complete development of their functionalities. There are four main dissolution methods, allowing the preparation of up to 40% gelatin solution:

Conventional method:

Anchi gelatin is first swelled in cold water (30 minutes to 1 hour) and then dissolved by heating in a water bath

High speed method :

Anchi gelatin is directly dispersed in hot water (80-90°C) with appropriate high-speed stirring. Once dispersed, it will dissolve under slow agitation (5 to 10 minutes)

Intermediate method:

Anchi gelatin is swelled in cold water (30 minutes to 1 hour) and then dissolves by addition to hot ingredients

Dissolution of mixes:

For fine particle size, Anchi gelatin is mixed to other dry ingredient before dissolution

Dairy specialties (such as full-fat and fruit yogurts), cream desserts

Gelatin improves and softens the texture of the end product without changing the taste. It helps to prevent syneresis (separation of dairy product and whey).

It binds the juice contained in the fruit, preventing it from being diffused into the yogurt.

 

Low-fat dairy specialties (such as low-fat yogurts)

Gelatin replaces the fats, giving the products a creamy texture.

Mousses

Gelatin’s frothing capacities are used in a large number of aerated products. On its own or in combination with other texturing agents, gelatin facilitates aeration, stabilizes emulsion and prevents the various ingredients from separating.

In association with carrageenan, an alkaline process gelatine is recommended to avoid precipitation of both polymers.

 

Ice creams and sorbets

Gelatin facilitates aeration, stabilizes the ice cream, improves low-temperature conservation and prevents the formation of ice crystals during long-term conservation. It also improves ices cream’s resistances to temperature variations. Combined with other texturing agents, it gives ice cream a very characteristics texture and also slows the melting of the ice cream in the mouth.
