Bake beautiful and delicious bread with this 15 3/4" x 4 3/4" x 4 3/4" non-stick pullman bread loaf pan with lid. This pan is made of quality Exopan fine steel. The mold's interior has a non-stick coating for easy removal of your baked goods and an even easier cleanup. This gives you the freedom to bake without worrying about crusts sticking to the mold or breaking during depanning. Protective enamel on the exterior of the pan ensures this product is a lasting addition to your kitchen. This pan's rolled-edge design with copper wire surrounding provides ultimate heat distribution for an evenly-baked loaf every time.
With the lid in place, baking with a pullman pan keeps the entire bread loaf contained and prevents it from expanding freely, producing a very uniform loaf with a straight, flat top and sides and perfectly square corners. The slight constraining of the baking loaf also prevents the formation of a crown as well as bubbling, leaving a fine, tight crumb perfect for slicing. The buildup of moisture from trapped steam allows the bread to form a perfect crust for a classic and tasty slice of bread. Pullman pans are also great for baking pain de mie, a soft white or brown bread intended for slicing and which is most similar to regular sandwich bread.
This pan combines the quality of cooking in tinplate with the conveniences of non-stick. To clean, simply wipe the mold clean inside and out. Exopan steel should not be exposed to humidity. It is temperature resistant from -20 to 450 degrees Fahrenheit. This bread mold is a quality piece that is designed for heavy-duty use and built to last in your bakery, restaurant, or catering operation.
